Breakfast Sandwich

Today I made breakfast sandwiches that my husband can take out of the freezer and eat whenever he wants. Being at stage 5 kidney failure and on dialysis greatly limits his favorite foods. He can no longer have his favorite, peanut butter sandwiches, so this is my attempt to give him a sandwich he likes to eat and can!
I used the sausage recipe from “Cooking for David” to make the sausage patties. Because I wanted to make enough to freeze, I tried two different ways of making the eggs. First I tried using a cupcake tin.


Spray a cupcake tin with oil (I use olive oil in a Pampered Chef spray pump)
Preheat oven to 350
Crack an egg into each hole
Bake for about 20 minutes

They turned out smaller than I wanted and hubby said he really didn’t want them unscrambled so my next try attempted to correct those issues. This time I used a muffin tin.

Crack an egg into a small bowl, scramble it and then pour into hole
Bake for about 20 minutes
