Fresh Apple Muffins using your Country Living Grain Mill

Fresh Apple Muffins

for use with your Country Living Grain Mill

2 cups of apples (peeled, cored, and chopped into small pieces)
1/2 Evaporated Cane Juice (or sugar)
1 egg
1 tsp vanilla
1/4 cup butter (melted)
1 cup freshly ground spelt flour (using your Country Living Grain Mill)
1 tsp baking soda
1 tsp cinnamon
1/2 tsp Himalayan salt (or salt)

In a small bowl mix apples and cane juice together, set aside. In a glass measuring cup, hand mix melted butter, vanilla and egg. In a large bowl hand mix flour, baking soda, cinnamon, and salt. Add the butter, vanilla, and egg mixture to the dry ingredients and hand mix. Once that is well mixed, all in the apple mixture and hand mix well. Fill cupcake liners in cupcake pan with mixture.

Bake at 325 degrees for 25 minutes. Toothpick should come out clean when done. Makes a dozen cupcake sized muffins.
